Carrot Growth Time

Hello all, long time no see. I have a question about carrots. How long does it take carrots to go from Planted to Harvestable? Also, what type of plant are they, I assume like a potato because they can't grow underground in the game.

Carrots grow really slowly, indeed. But I don't know how many days it lasts to have them fully mature. And they look like potatoes/vines.
