She didn't do a very good job, though, because I don't know what I'm doing....  She's been... subjecting her family to Mixology practice.

Don't bother using the "practice making drinks" action - actually make drinks.  Just like cooking, your sim will get better mixing each type each time he/she makes that certain drink.  Plus they get wishes to make, for example, an Outstanding Energy Drink, then a wish to make a Perfect Energy Drink.  Just keep making drinks, all the different kinds, and that way when you moonlight, your sim will create higher quality drinks (and hopefully will thus not get kicked out for making terrible tasting drinks!).  Also, don't forget to make the custom drinks that you learn from other bars and clubs - you get better at those as well.

Plus, making the drinks will help fulfill that skill challenge.

Edited to add: I would like to take this opportunity to say that I really, really like the Mixology skill.  I think it's incredibly helpful.  I'm not sure which skill challenge it is, but eventually your sim's drinks are so amazing that their moodlets last much longer, and I've noticed that the Crazy drink will alter a sim's traits for as long as that moodlet lasts (gives your sim Party Animal and maybe Insane?).  I personally love the Energy drink - I can keep my sims going for an extra five hours before they pass out, plus I can send them to sleep even before the moodlet runs out, something that you can't do with the Buzzed (I believe it's called) moodlet that you get from making espresso/coffee/whatever it is.  I'm not sure how much the Skill Gain drink helps, I haven't tested it, but every little bit helps, especially when you're crunched for time.

Thanks, Pam.   :)  I do what I can.  Also, if you're trying to finish the challenge for the custom drinks you learn from different bars, an easy way to finish it up (if you're having trouble finding the last few drinks you're missing) is to add a bar to the gym.  The gym is the only place that precedes LN that I could find that offers unique drinks.

For casual games, if you find adding/building all the different types of bars and clubs somewhat exhausting (I certainly do), then you can go into Edit Town and change the lot type to the new type of bar you need in order to learn the drinks.

I'm doing it for the Immortal Dynasty Challenge, so I'm limited on what I can do in Edit Town.  I can place all the bars, but I won't be able to put a bar in the gym.

Ah.  Gotcha.  Wasn't sure if the gym was one of the properties you had bought.

I'm having trouble with learning the custom drinks at the bars.  My Sim has learned only one and, as far as I can tell, she learned it from ordering and drinking it.  However, she doesn't learn any others that she orders and drinks.  I'm having her order specific drinks, but nothing happens.  I thought maybe I wasn't staying with her long enough as the active Sim or that maybe I was queuing up too many drinks in a row.  But I'm not sure because even when I stayed with her active and with only one drink, she sat and drank the one drink until closing time without learning it.  Any suggestions?

Keep ordering until she learn. Good thing is that she'll instantly drink that drink (this doesn't sound right), and order another one, as long as you keep telling her to order. It may take up to 5 or 6 drinks to learn a recipe, and sometimes she'll learn from one drink. But keep ordering.

Since you're having trouble with her learning drink recipes, you probably want to keep her as the active sim for longer so you can make sure she's actually ordering the drinks you have queued up for her.  I don't know why she didn't order them like you wanted her to, I don't seem to recall having that problem (but I certainly don't usually play with 8 sims in a household!).  Either way, make sure her mixology skill is high enough to learn the drink (for example, my sim with a level 7 mixology skill couldn't learn a drink from The Grind - a popup tells you that the sim almost has the recipe down but isn't skilled enough to quite get it - but could learn the ones from Eugi's Watering Hole).  My method of learning drinks is to have my sim order the same drink over and over under she learns it - it usually only takes once or twice, but sometimes they're stubborn and won't learn it until, as Anushka says, five or six times.  If it's taking longer than that, you should check the skill journal to see if your sim already learned it and you forgot or didn't notice.  Anyway, I just go around in a circle on the Order Drinks menu so I know that I've gotten them all (instead of just picking a drink at random).

Thanks for the suggestions.  She's level 10, so that's not a problem.  I haven't been making her order the same drink over and over, so that's probably what's wrong.

I've found a way to get her to serve 60 Sims!  I have her manage the bar at home and then get my other Sims to order drinks.  Yay!  She's up to 10 Sims served after one night with a party.  I don't even need the party, so it was a waste mostly.  I'm really glad I got this figured out because I was truly worried that this skill was going to break my Immortal Dynasty.  Thanks for all the help!  :D

Good job, Pam! I was thinking it shouldn't be a problem with 7 other sims living in the household.  Now just keep making drinks and you'll hit 500 in no time!!!

Wow, that would be a record setting. :| Although I would doubt if 500 would actually influences the quality of the drink it still is a nice round number.

Leto, making 500 drinks is one of the skill challenges that does increase quality of drinks. Also, more drinks you make better quality it turns out. With those skill challenges done, and Better mixologist LTR all drinks turns perfect, at least in my games. Different challenge is serving 60 Sims. That one was hard but with this great tip from Pam, it is much easier to accomplish it. Thanks Pam!

Bubblegum got the Poseidon challenge, mixing 500 drinks!  She's got every Mixology skill journal challenge except the one where she has to learn 42 drinks from the clubs.  She's working on that one.  It will take time, but she'll get it.

Good luck with that. I have done it and I agree, it is hard to do, but possible.
