I know you can moonlight as a bartender, but how about a bouncer? Thanks!

No, I'm pretty sure not. Bouncer is an NPC job only.

KRae is right. And while your sims might get an opportunity to "Bounce the Crowd," it's completed inside of a rabbithole instead of anywhere where you could actually bounce a crowd.
