I just now noticed that that's not in the rules specifically, but I've been assuming it was OK because I think I remember Pam or someone successful mentioning doing that, and feel that being allowed to place EA-created lots may cover that (or may not). So I wanted some clarity, to know if my dynasty is still official or not.

Lol I think you might be missing what I'm trying to say. That person wants to use different supermax skills this time around, not meaning the obvious having to do 8 unique ones but meaning that the skills that they supermax will be different in this attempt versus their last attempt.

You can use the World Editor to place new empty lots from Edit Town if there's no place for the buildings you want to use.

This was probably asked but 156 pages is a lot. Since the Daycare profession only has 5 levels does it still count as a maxed career in a dynasty?

Say when we supermax logic we don't have generations. Then after they have eaten ambrosia we get it. What should be done about the potions challenge?
Also, what of we get it after logic is supermaxed but before that immortal eats ambrosia?

The SuperMax status is based on whatever games the player has installed at that moment when it's time to eat Ambrosia.  So, if Logic has been SuperMaxed and Ambrosia has been eaten, don't worry about anything that is installed afterward.  However, if Ambrosia has not been eaten, the Sim will need to SuperMax the skill based on what's installed, which means all Logic skill challenges will have to be met.

Yeah, it all comes down to that moment before eating Ambrosia as to what needs to be fulfilled for a SuperMax skill. If you want to make things easy on yourself because an expansion adds an additional requirement, then fine — don't install the expansion until after the Sim in question has eaten Ambrosia.
